  • 1 cup raisins (soaked in warm water)
  • 1 tsp salt
  • Egg wash (1 egg yolk mixed with 1 tbsp water) – optional

Instructions

  1. In a bowl, combine warm water, brown sugar, and yeast. Let sit until foamy (about 5 minutes).
  2. In another bowl, mix flour, salt, and cinnamon. Combine with the yeast mixture to form a dough.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover with a damp cloth, and let it rise in a warm area until doubled in size (about 1 hour).
  5. Gently knead in soaked raisins after the dough has risen.
  6. Divide the dough into equal pieces, shape each into a ball, and poke a hole through the center to form bagels.
  7. Boil each bagel in lightly sweetened water for about 1 minute per side.
  8. Preheat oven to 425°F (220°C). Bake boiled bagels on parchment-lined sheets for 20-25 minutes until golden.
