  • 1 lb lean ground beef
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, heat olive oil and sauté onions until translucent. Add garlic and cook for about one minute.
  3. Increase heat slightly and crumble in ground beef; cook until browned (7-10 minutes), draining excess fat if needed.
  4. Stir in diced tomatoes and chicken broth; bring to a boil.
  5. Add broken lasagna noodles and Italian seasoning; cook uncovered for 10-12 minutes until noodles are tender but not mushy.
  6. Remove from heat and stir in ricotta cheese until fully blended. Serve topped with shredded mozzarella.
