  • 1 ½ cups all-purpose flour

  • ½ cup vegetable oil
  • 2 large eggs (room temperature)
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a bowl, whisk together eggs, sugar, oil, lemon juice, and zest until smooth.
  4. In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Gradually mix into the wet ingredients until just combined.
