  • 1 cup sweet corn (fresh or frozen)
  • 1/4 cup red onion (finely chopped)
  • 1/2 cup mayonnaise
  • 2 tbsp lime juice (freshly squeezed)
  • 1/4 cup cilantro (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. In the last two minutes of cooking, add the sweet corn.
  2. Drain the pasta and corn mixture; rinse under cold water to cool completely.
