  • 1 cup creamy or chunky peanut butter
  • 1/2 cup jelly or jam (strawberry or grape recommended)
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking soda
  • 2 large eggs (room temperature)
  • 1/2 tsp salt
  • 1/4 cup melted butter or oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth but slightly chunky.
  3. In another bowl, whisk together peanut butter, eggs, melted butter, and jelly until well combined.
  4. In a separate bowl, mix flour, sugar, baking soda, and salt until blended.
  5. Gently fold dry ingredients into wet ingredients until just combined; avoid overmixing.
  6. Pour half of the batter into the prepared loaf pan. Add dollops of jelly on top and swirl with a knife before adding the remaining batter.
  7. Bake for about 60 minutes or until golden brown and a toothpick comes out clean from the center. Allow to cool before slicing.
