- 1 cup fresh basil pesto
- 8 slices sourdough bread
- 8 oz fresh mozzarella cheese
- 2 cups fresh spinach leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper.
- Bake the chicken on a parchment-lined baking sheet for 25-30 minutes until fully cooked. Shred the chicken once cooled.
- Spread pesto on one side of each slice of sourdough bread. Layer shredded chicken, mozzarella, and spinach between two slices.
