  • 1 can (20 oz) canned pineapple slices, well-drained
  • 10 maraschino cherries
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a round cake pan with butter or nonstick spray.
  2. Melt the butter and brown sugar in a saucepan over medium heat until bubbly; pour into the greased pan.
  3. Arrange the pineapple slices on top of the butter-sugar mixture and place maraschino cherries in the centers.
  4. In a bowl, whisk together flour, baking powder, and salt.
  5. Cream together granulated sugar and softened butter until fluffy; add eggs one at a time.
  6. Gradually mix in the flour mixture alternately with milk and vanilla until just combined.
