  • 1/2 cup chocolate chips (semi-sweet or dark)
  • 1/2 cup mini marshmallows
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter with brown and granulated sugars until light and fluffy.
  4. Mix in pumpkin puree and egg until smooth.
  5. Gradually add dry ingredients to wet ingredients until just combined; do not overmix.
  6. Fold in chocolate chips and mini marshmallows gently.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spaced about 2 inches apart.
  8. Bake for 12-15 minutes until edges are set but centers appear slightly underbaked.
  9. Cool on the sheets for a few minutes before transferring to wire racks.
