  • 8 oz mascarpone cheese
  • 1/2 cup strong brewed coffee
  • 1 tsp ground cinnamon

  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream pumpkin puree, brown sugar, egg, and vanilla until smooth.
  4. Gradually mix dry ingredients into the wet mixture until combined.
  5. Scoop dough onto prepared baking sheets with space in between.
  6. Bake for 12-15 minutes or until edges are golden and centers are set.
  7. Allow cookies to cool on baking sheet for 5 minutes before transferring to wire racks.
