  • 4 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 cup all-purpose flour (for topping)
  • 1/2 cup rolled oats
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup brown sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and chop rhubarb into small pieces.
  3. In a large bowl, combine rhubarb with granulated sugar and 1/4 cup of flour; mix until well-coated.
  4. In another bowl, combine the remaining flour, oats, brown sugar, cinnamon, and cold butter. Blend until it resembles coarse crumbs.
  5. Pour the rhubarb mixture into a greased baking dish and sprinkle the crumble topping evenly over it.
  6. Bake for 30-35 minutes or until golden brown and bubbly.
  7. Let cool slightly before serving with vanilla ice cream or whipped cream.
