- 4–6 boneless, skinless chicken thighs
- 1 lb (450g) Yukon Gold potatoes, chopped into bite-sized pieces
- 6 cloves fresh garlic, minced
- 1/2 cup (113g) unsalted butter
- 2 tbsp freshly squeezed lemon juice
- 2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken thighs dry with paper towels; set aside.
- In a small saucepan over medium heat, melt butter until bubbly. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Remove from heat and stir in lemon juice, oregano, salt, and pepper.
- In a large bowl, combine chicken and chopped potatoes. Pour garlic butter sauce over them and mix well.
- Spread evenly on a parchment-lined sheet pan.
- Roast for 30-35 minutes or until chicken reaches 165°F (74°C) and potatoes are golden brown.
