- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 bell peppers, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 2 tsp chili powder
- 1 tsp cumin
- 4 cups low-sodium chicken broth
- Juice of 1 lime
- Optional: Sour cream and grated cheddar cheese for serving
Instructions
- Prep your ingredients by dicing the onions and bell peppers. Rinse canned beans.
- Place the chicken breasts in the slow cooker. Layer the beans, tomatoes, onions, peppers, garlic, chili powder, cumin, and broth over the chicken.
