  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 bell peppers, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tsp chili powder
  • 1 tsp cumin
  • 4 cups low-sodium chicken broth
  • Juice of 1 lime
  • Optional: Sour cream and grated cheddar cheese for serving

Instructions

  1. Prep your ingredients by dicing the onions and bell peppers. Rinse canned beans.
  2. Place the chicken breasts in the slow cooker. Layer the beans, tomatoes, onions, peppers, garlic, chili powder, cumin, and broth over the chicken.
  3. Squeeze lime juice into the pot and stir gently until well combined.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
