  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup lager beer
  • 2 tbsp extra virgin olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 bell pepper, chopped
  • 1/2 red onion, chopped
  • 2 ripe avocados, diced
  • 1 cup corn (fresh or frozen)
  • 1/2 cup crumbled feta cheese
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Cut chicken into uniform cubes. In a bowl, whisk together beer, olive oil, paprika, cumin, chili powder, salt, and pepper. Add chicken cubes and marinate for at least 30 minutes.
  2. Chop bell peppers and red onion into bite-sized pieces.
  3. In a separate bowl, combine diced avocados, corn, feta cheese, lime juice, salt, and pepper; mix gently.
  4. Preheat grill to medium-high heat. Thread marinated chicken cubes onto skewers alternating with bell peppers and onions.
  5. Cook skewers for about 10-12 minutes, turning occasionally until chicken is cooked through.
  6. Let skewers rest for a couple of minutes before serving with salsa on top or on the side.
