  • 2 ears fresh sweet corn
  • 2 ripe peaches
  • 8 oz burrata cheese
  • 1 jalapeño pepper (or to taste)
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil (plus more for drizzling)
  • ¼ cup fresh basil leaves (for garnish)
  • Salt & pepper (to taste)

Instructions

  1. Preheat your grill over medium-high heat. Grill the corn for about 10-15 minutes until charred and tender, turning occasionally. Remove from grill and let cool.
  2. Slice the peaches into wedges while the corn cools.
  3. Finely dice the jalapeño (removing seeds for less heat) and mix it with lime juice and olive oil in a small bowl.
  4. Cut the grilled corn off the cob and combine it with peach wedges, diced jalapeño, salt, and pepper in a large mixing bowl. Gently toss to mix.
  5. Serve by placing burrata cheese on a plate surrounded by the corn-peach mixture. Drizzle with additional olive oil and garnish with fresh basil.
