Ingredients
- 2 medium sweet potatoes (about 1 pound), peeled and cubed
- 1 cup red lentils, rinsed
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1 large egg (optional) or 1 tbsp flaxseed meal mixed with 3 tbsp water
- 1/4 cup fresh parsley or cilantro, chopped
- Salt and pepper to taste
Instructions
- Boil sweet potatoes in salted water until tender, about 15 minutes; drain.
- In a skillet, heat oil over medium heat. Sauté onions until golden brown. Add garlic and cook for an additional minute.
- Cook red lentils in vegetable broth or water until soft, about 10-12 minutes; drain any excess liquid.
- In a bowl, mash sweet potatoes and mix in cooked lentils, sautéed onions and garlic, breadcrumbs, spices, herbs, salt, and pepper. If using egg, add it now.
- Shape into patties (about 3 inches in diameter) and pan-fry on medium-high heat for 4-5 minutes per side until golden brown.
