  • 1 cup colorful bell peppers, sliced
  • 1 cup cucumber, julienned
  • 1 cup cooked shrimp or tofu, diced
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon low-sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili flakes (optional)
  • 1/2 cup full-fat coconut milk
  • 1 tablespoon honey or maple syrup

Instructions

  1. Prepare all ingredients and tools: sharp knives, cutting board, and bowls for soaking rice papers.
  2. Soak rice paper wrappers in warm water for about 10 seconds until soft but not mushy.
  3. Lay softened wrappers flat and add sliced veggies and protein in the center.
  4. Fold sides inward over filling and tightly roll from bottom to top.
  5. In a bowl, mix peanut butter, soy sauce, lime juice, honey/maple syrup, coconut milk, and chili flakes until smooth for the sauce.
