- 1 cup all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1 cup shredded cheese (cheddar or cream cheese)
- 1/4 cup pepper jelly
- 1 egg yolk
- 1/4 tsp salt
- 2–3 tbsp cold water
Instructions
- In a large bowl, combine flour and salt. Cut in chilled butter until the mixture resembles coarse crumbs.
- Stir in the egg yolk and add cold water gradually until the dough comes together; it should be moist but not sticky.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8-inch thick.
- Use a round cookie cutter to cut out circles from the dough. Press your thumb into each circle to create an indentation.
- Fill each thumbprint with shredded cheese and top with a small dollop of pepper jelly.
- Bake for 15-20 minutes or until golden brown.
