  • 2 medium zucchinis (grated)
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Grate the zucchinis and squeeze out excess moisture using a clean towel.
  3. In a microwave-safe bowl, melt the butter and chocolate chips together, stirring every 30 seconds.
  4. In a large bowl, whisk together sugar and eggs until fluffy, then mix in the melted chocolate and vanilla.
  5. Gently fold in the grated zucchini.
  6. In another bowl, sift together flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  7. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean with a few moist crumbs.
