  • 1 cup Greek yogurt (plain, full-fat)
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 3/4 cup brown sugar
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth but slightly chunky.
  3. Add Greek yogurt, eggs, brown sugar, vanilla extract, and melted butter to the mashed bananas. Mix until just combined.

  5. Pour the batter into the prepared loaf pan and smooth the top.
