  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup green or brown lentils (dried)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 4 cups low-sodium chicken broth
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. Heat vegetable oil in a large skillet over medium heat. Sauté onion and garlic until softened (3-5 minutes).
  3. Add seasoned chicken breasts to the skillet. Cook until golden brown on both sides (5-7 minutes per side).
  4. Stir in rinsed lentils and pour in chicken broth. Bring to a gentle boil, then cover and simmer on low heat for about 20 minutes until lentils are tender.
  5. Taste and adjust seasoning with salt, pepper, cumin, or paprika as desired.
  6. Serve warm, garnished with fresh herbs if desired.
