  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup full-fat Greek yogurt
  • 4 cloves fresh garlic, minced
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • 1 cucumber, finely chopped
  • 2 ripe tomatoes, diced
  • 1 small red onion, thinly sliced
  • Pita bread or 2 cups cooked rice

Instructions

  1. In a bowl, mix Greek yogurt, minced garlic, lemon juice, oregano, salt, and pepper. Coat chicken breasts in the marinade and let them soak for at least 30 minutes.
  2. Heat a grill pan over medium-high heat. Grill marinated chicken for about 6-7 minutes on each side until golden brown and juices run clear. Let rest before slicing.
  3. Combine shredded cucumber (squeezed dry), Greek yogurt, minced garlic, lemon juice, and salt in a bowl; mix until smooth.
  4. Dice tomatoes and slice red onion while chicken cooks.
  5. Slice the rested chicken into strips. Layer rice or lettuce as the base in bowls; top with sliced chicken.
  6. Generously sprinkle cucumbers, tomatoes, red onions over each bowl and drizzle with tzatziki sauce.
