  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 2 tbsp ají amarillo paste (yellow chili paste)
  • 1 cup full-fat coconut milk
  • 1 medium yellow onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Prepare all ingredients by finely chopping the onion and mincing the garlic.
  2. Heat olive oil in a large skillet over medium heat. Sauté the onions for about 5 minutes until translucent; add garlic and cook until fragrant.
  3. Add chicken breasts and ají amarillo paste to the skillet, browning the chicken on both sides for approximately 7 minutes.
  4. Pour in coconut milk and chicken broth. Stir gently and bring to a simmer; let it cook for about 15 minutes until the chicken is fully cooked.
  5. Stir in lime juice and cilantro just before serving.
  6. Serve hot over rice or quinoa, garnished with extra cilantro if desired.
