- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 2 tbsp ají amarillo paste (yellow chili paste)
- 1 cup full-fat coconut milk
- 1 medium yellow onion, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp fresh lime juice
- Salt and pepper to taste
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
Instructions
- Prepare all ingredients by finely chopping the onion and mincing the garlic.
- Heat olive oil in a large skillet over medium heat. Sauté the onions for about 5 minutes until translucent; add garlic and cook until fragrant.
- Add chicken breasts and ají amarillo paste to the skillet, browning the chicken on both sides for approximately 7 minutes.
- Pour in coconut milk and chicken broth. Stir gently and bring to a simmer; let it cook for about 15 minutes until the chicken is fully cooked.
- Stir in lime juice and cilantro just before serving.
