  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup carrots, thinly sliced
  • 8 oz lo mein noodles (fresh or dried)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 green onions, chopped
  • 1 cup broccoli florets
  • 1 tbsp cornstarch (optional for thickening)

Instructions

  1. Chop chicken into bite-sized pieces and slice all vegetables.
  2. Place chicken in the crockpot followed by bell peppers, carrots, broccoli, garlic, and green onions.
  3. In a bowl, mix soy sauce and sesame oil; pour over the ingredients in the crockpot and stir gently.
  4. Cook on low heat for 6 hours or high heat for 3 hours.
  5. In the last 30 minutes of cooking, add lo mein noodles and stir to combine.
