  • 1 whole chicken (45 lbs)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • 4 cloves garlic, minced
  • 2 lemons, cut into wedges
  • 2 oranges, cut into wedges
  • 1 cup mixed pitted olives (green and black)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the whole chicken dry with paper towels.
  3. Rub olive oil all over the chicken and season generously with salt, pepper, minced garlic, and chopped herbs.
  4. Stuff the cavity with lemon and orange wedges along with extra herbs.
  5. Scatter olives around the chicken in a roasting pan.
  6. Roast for about 1 hour 15 minutes or until juices run clear when pierced at the thigh.
