  • 1 cup dried black-eyed peas (soaked overnight)
  • 1 medium yellow onion (finely chopped)
  • 4 cloves garlic (minced)
  • 4 cups low-sodium vegetable or chicken broth
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • Optional: 1 ham hock or 4 strips bacon

Instructions

  1. Rinse the soaked black-eyed peas under cold water.
  2. In a skillet, sauté the chopped onion over medium heat until translucent. Add minced garlic and cook until golden brown.
  3. Transfer the peas to your crock pot. Add sautéed onions and garlic, broth, smoked paprika, bay leaves, salt, and pepper.
  4. If using meat, place it on top of the mixture.
  5. Set the crock pot on low heat and cook for 6-8 hours until peas are tender but intact.
  6. Remove bay leaves and any meat bones before serving. Adjust seasoning as needed.
