Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mash the fresh strawberries in a bowl until chunky.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy (about 3 minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. In another bowl, whisk together flour and baking powder, then gradually add to the wet mixture until combined.
  6. Fold in the mashed strawberries and pink food coloring if desired.
  7. Scoop dough onto prepared baking sheets, spacing them about two inches apart.
