Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/3 cup low-sodium soy sauce
  • 4 cups chicken broth
  • 1 cup sliced green onions
  • 8 oz ramen noodles
  • 2 cups mixed vegetables (fresh or frozen)
  • 1 tbsp sesame oil

Instructions

  1. Place chicken breasts in the bottom of the crockpot and season with salt and pepper.
  2. Add minced garlic over the chicken.
  3. Pour in soy sauce and chicken broth.
  4. Add mixed vegetables to the pot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in ramen noodles until tender.
  7. Drizzle with sesame oil before serving and garnish with sliced green onions.
