Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into an 8×8 inch baking dish.
- Bake the crust for about 10 minutes until golden brown. Let cool.
- In another bowl, whisk together lime juice, sweetened condensed milk, remaining sugar, and egg yolks until smooth.
- Pour filling over cooled crust and bake for another 15-20 minutes until slightly set in the center.
- Cool completely at room temperature, then refrigerate for at least 2 hours before serving. Cut into squares and top with whipped cream.
