  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • ½ cup fresh key lime juice (about 6 key limes)
  • 1 can (14 oz) sweetened condensed milk
  • 4 large egg yolks
  • Whipped cream (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into an 8×8 inch baking dish.
  2. Bake the crust for about 10 minutes until golden brown. Let cool.
  3. In another bowl, whisk together lime juice, sweetened condensed milk, remaining sugar, and egg yolks until smooth.
  4. Pour filling over cooled crust and bake for another 15-20 minutes until slightly set in the center.
  5. Cool completely at room temperature, then refrigerate for at least 2 hours before serving. Cut into squares and top with whipped cream.
