Ingredients
- 1 cup orzo pasta
- 1 can (5 oz) high-quality canned tuna in olive oil
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- Juice and zest of 1 lemon

Instructions
- Prepare all ingredients on a clean countertop for easy assembly.
- In a pot of salted boiling water, cook orzo according to package instructions until al dente. Drain and rinse under cold water.

- In a large bowl, mix cooked orzo with drained tuna, chopped veggies, feta cheese, herbs, lemon juice and zest, olive oil, salt, and pepper. Toss gently to combine.
