  • 1 cup orzo pasta
  • 1 can (5 oz) high-quality canned tuna in olive oil
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Juice and zest of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients on a clean countertop for easy assembly.
  2. In a pot of salted boiling water, cook orzo according to package instructions until al dente. Drain and rinse under cold water.
  3. Chop cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  4. In a large bowl, mix cooked orzo with drained tuna, chopped veggies, feta cheese, herbs, lemon juice and zest, olive oil, salt, and pepper. Toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving to meld flavors.
