  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup creamy peanut butter
  • 4 cups low-sodium chicken broth
  • 1/4 cup low-sodium soy sauce
  • Juice of 1 lime
  • 2 cups mixed vegetables (carrots and bell peppers)
  • Fresh cilantro or green onions for garnish

Instructions

  1. Chop vegetables into bite-sized pieces.
  2. Place chicken breasts at the bottom of the crockpot. Add garlic, ginger, vegetables, coconut milk, broth, soy sauce, and peanut butter.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove cooked chicken, shred it using two forks, and return it to the pot.
  5. Squeeze lime juice into the soup before serving.
