  • 2 large carrots, sliced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 3 tbsp tomato paste
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Juice of half a lemon (optional)

Instructions

  1. Chop the cabbage into bite-sized pieces, dice the onion, and slice the carrots.
  2. In a large pot over medium heat, sauté onions in olive oil until translucent (about 5 minutes).
  3. Add minced garlic and sliced carrots; cook until fragrant (about 2 minutes).
  4. Stir in chopped cabbage and tomato paste; cook until cabbage wilts slightly (about 3–4 minutes).
  5. Pour in vegetable broth and add thyme and bay leaf; bring to a gentle boil then simmer for about 30 minutes.
  6. Season with salt and pepper; squeeze lemon juice before serving if desired.
