Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice zucchinis into thin rounds (about ¼ inch thick).
  3. In a bowl, whisk eggs until frothy.
  4. In another bowl, mix panko breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  5. Dip each zucchini slice in the egg mixture then coat with the breadcrumb mixture. Place on the baking sheet in a single layer.
  6. Bake for 20-25 minutes or until golden brown, flipping halfway through for even crisping.
