  • 1 cup jasmine rice
  • 1 lb boneless, skinless chicken thighs
  • 1-inch piece fresh ginger, peeled and minced
  • 4 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, finely chopped (for garnish)
  • 1 tbsp sesame oil (for finishing)

Instructions

  1. Rinse jasmine rice under cold water until the water runs clear.
  2. In a large pot over medium heat, add a splash of oil and sauté minced garlic and ginger until fragrant. Add chicken thighs and brown on both sides.
  3. Stir in the rinsed rice and pour in the chicken broth. Bring to a gentle boil.
  4. Reduce heat to low and simmer for about 45 minutes, stirring occasionally.
  5. In the last few minutes of cooking, stir in soy sauce. For extra creaminess, mash some rice against the pot's side with a wooden spoon.
  6. Once thickened to your liking, ladle into bowls and drizzle with sesame oil. Top with green onions and serve.
