- 1 ripe pineapple, sliced into rings
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 3 garlic cloves, minced
- 1 tsp ground ginger
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a medium bowl, whisk together soy sauce, brown sugar, garlic, ginger, lime juice, olive oil, salt, and pepper to create the marinade.
- Place chicken in a resealable bag or shallow dish and pour half the marinade over it. Seal and refrigerate for at least 30 minutes or overnight.
- While marinating, slice the pineapple into rings.
- Preheat grill to medium-high heat (375°F/190°C).
- Remove chicken from marinade (discard leftovers) and grill for about 6-7 minutes per side until cooked through (internal temp: 165°F/74°C). Grill pineapple slices until caramelized.
- Serve chicken with grilled pineapple slices and squeeze fresh lime juice on top.
