  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup melted butter (or vegetable oil)
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon (for swirl)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, mash the bananas until smooth but slightly chunky.
  3. Whisk together flour, baking soda, salt, and cinnamon in a separate bowl.
  4. In the banana bowl, mix in melted butter and sugars until creamy.
  5. Add eggs one at a time and stir in vanilla extract.
  6. Gradually combine the dry ingredients into the wet mixture, folding gently.
  7. For the cinnamon swirl, combine remaining sugar and cinnamon in a small bowl. Layer half the batter in the loaf pan, sprinkle half the cinnamon mixture, add remaining batter, and top with more cinnamon sugar.
  8. Bake for 60-65 minutes until golden brown and toothpick inserted comes out clean.
