  • 8 oz udon or egg noodles
  • 12 oz potstickers (store-bought or homemade)
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup chopped bok choy
  • 1/2 cup sliced scallions
  • 1/2 cup sliced bell peppers
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • Sriracha (optional)

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and set aside.
  2. In a pot, heat broth over medium heat. Add ginger and garlic; stir until fragrant.
  3. Add vegetables to the broth and cook for 3-4 minutes until slightly tender.
  4. In a skillet, fry potstickers on medium heat until golden brown on both sides.
  5. Stir soy sauce and sesame oil into the broth mixture and simmer for another 2 minutes.
  6. Combine cooked noodles and fried potstickers into the broth; heat through before serving.
